For the longest storage life possible, hardneck garlic wants dark + dry + airflow

The temperature should be between 50-60°F with 40-60% humidity. This should yield 3-6 months of quality garlic. 

This environment can usually be achieved in the basement, but be careful that it's not too cold or too humid. 

If you bought your garlic from us, it came in a red mesh bag - that's a great way to keep what you're not using to ensure good airflow. 

Avoid the sprout zone: about 40–55°F. That’s where cloves break dormancy fastest. A typical kitchen fridge often sits right in that band and is too humid, so whole bulbs there sprout or mold. Don’t use it for long-term keepers.

Also avoid:

  • Sealed plastic
  • Damp basement corners
  • Heat from a furnace, stove, or sunny window
