Scapes

These edible flower stalks are a key milestone in the hardneck garlic growing season. They signal that the plant is maturing and harvest is not too far away! These scapes have a wonderful garlicky-onion flavor that can enhance many dishes from an omelet, to guacamole, to compound butter on a steak! They have a tiny bit of pleasant "bite" when raw, but they mellow out substantially when cooked. Enjoy them incorporated into hummus or pesto, or treat them like you would green beans or asparagus - saute with butter and salt or throw them on the grill! These are an early summer treat you are sure to love!
